ABOUT ME: I’m a small town guy that grew up in Southern Illinois. Yep, that’s right! I’m not from Louisiana……. That said, I have lived here and learned the Louisiana style of cooking for the last 20 years. So, how does that qualify me to teach you how to cook great food? (Yes, I can hear the sarcastic voices in your head. Just sayin…) My answer is that I have learned from some of the best cooks I’ve ever met and yes they are from Louisiana. I’ll be sure to introduce them all along the way as we introduce new recipes for you to enjoy. In fact, my wife is from Louisiana and loves and endorses my cooking. Of course when I cook that means she doesn’t have to! Maybe there’s a hidden agenda on her part!!!!
